  1. The recipe sounds great, but wondering why canola oil is included as a wholesome ingredient, as it’s known to be one of the oils to be avoided for human consumption. It is commonly used in processed foods and salad dressings due to being less expensive than olive oil for instance, but the mild-flavored Avocado oil is an excellent substitute for baking etc. Coconut oil is fine also, but I find that baking with it yields a less moist result than avocado oil.

  2. Wow, also just noticed, three cups sugar! I’m guessing it’s going to be enjoyable using just half that amount. Seems like 3/4 cups sugar to 1 3/4 cups flour for one loaf would be ample sweetness. Substituting honey or maple syrup would be complementary flavors to this recipe as well. Comfort food can be made more wholesome by tempering the sugar quantity, and it’s doubtful the family would miss the added sweetness. ( Now I’m sounding like my dad!) Adding a dab of honey and butter to a slice would be a yummy fix if they do :). Wishing all success to the author and hope readers feel confident to experiment with the recipe.

    • Dear Maida……I just read your comment, and to be truthful, I did not read the recipe, but you are absolutely correct. It’s the kind of food we get here in a Senior Living Facility. All processed food and it is not only bad food, it makes us sit in the bathroom after each meal for at least an hour, but we have no choice. It’s nice that they have that recipe, but not even young people or kids should eat that kind of food. All my doctors have told me this. Canola oil is bad for you and that much sugar is really not necessary. I do know that, as I was diabetic, but now I have been under control with my A1C is at 5.7 now for at least 10 years. I does really look yummy, but I am 78 years old and have been researching all about food. Thank you Maida for bringing me look at the ingredients. We don’t have kitchens here in our Apartments so I couldn’t make it even if I wanted to. All fast food restaurants serve processed foods and my son and his family eat out a lot and about 2 years ago, his numbers were off the wall. Still needs to lose about 100 pounds.   3. A most helpful and spiritual devotion that the (in)courage women have given us today (Saturday, October 18, 2025.) It has started my weekend on a positive note and the recipe looks so good, but where I live in a senior facility, we don’t have kitchens, only microwaves. I used to bake things all the time and I miss not being able to do it anymore, but that is life. Maybe, if the new Facility that has been built will allow me an apartment there, they do have kitchens in the Independent Living part of the facility, but that is not due to open until at least February, 2026. I pray that God will help to show them that I would be a good and kind resident. This wait will be long, but I did put a deposit on an apartment which just puts me on a priority list to show that I am serious about this new place.
