These cookies may have a teensy bit of chocolate in them, but with smashed bananas and rolled oats, Shauna’s Breakfast Cookies are a healthy, easy breakfast alternative. You’ll find the complete recipe on page 116 in Baking Cookies with Batman.
Ours are monster-sized, but the recipe Shauna adapted it from created bite-size portions. Use your judgment as to what you need :).

I haven’t tried this recipe yet, but it’s on our list. Our morning snack go-to is a homemade French granola (chocolate that you can feel good about eating), and this would be a fantastic alternative to our standby. Can’t wait to try it. 🙂

I’m loving reading Bread & Wine and this recipe is one that I will definitely try. While reading, I picture Shauna and her friends and family around that huge table sharing precious moments, like we do at my house as well…

I love this book, and am grateful to the Lord for leading me to it–albeit not through InCourage. So to discover it here is also a blessing. I had to smile about the breakfast cookies, because my chocoholic husband swears that chocolate cake is a complete breakfast–attesting to the flour (grains), eggs (protein), and trace vitamin A in chocolate! I think I will refer him to the cookies as an even better alternative. They sound marvelous!

This recipe was sooo timely! In one month my two high school daughters will be leaving the house at 6:30 a.m. to catch their bus to school. As my daughter grabbed a store-bought breakfast cookie just this morning, she exclaimed how they will be her saving grace for a quick breakfast. I am so excited to try this healthier version for my family. My hubby is also gluten free. Perfect recipe! Thanks!

These sound and look fabulous. I am so glad Robin asked about freezing because this is something I could see making a few batches of and freezing. They would be the perfect grab and go, individually wrapped, healthy breakfast for my high school daughter who thinks she doesn’t need to eat breakfast but is always starving by her 2nd class. 🙂 Oh…and after school soccer practice snacks.

I am amazed at how much more real you have become to me seeing you delight in the kitchen! I have enjoyed so many of the book club studies and didn’t know what I might get out of this one but I figured I would try it. What a joy it has been to grow and be challenged by the book for sure but to see you guys in “real life” was heart warming and precious to me. After all this time together, I count you as my friends even though we have not met. Thank you for your warmth and humility. Godliness really can grow in Community even when you don’t share face to face.
